Quality of Protein
Many high protein vegetable sources, which are much more abundant than animal protein, are easily assimilated by the body with little or no harmful toxic by-products. Vegetables are best consumed with other veggies to enhance their protein content. In “the China Study”, a book written after one of the most comprehensive studies of nutrition ever done, the researchers found that animal protein consumption was a direct link to cancer, heart disease, diabetes and obesity. The toxins in meat products are predominantly harming our bodies’ immune system. Since animal cell structure is the closest thing to our cell structure it is absorbed well and utilized, which can be both healthy and dangerous. With the transfer of the cells, come the good and the bad. The drugs and hormones given to animals are also then transferred and absorbed into our bodies in the same way. Organic meats are without these chemicals but plant-based proteins can offer as much protein with many more vitamins and minerals. Beans are among the best protein sources and are high in oil, fat and fiber. These affordable, attainable, and healthy protein sources offer many different therapeutic values. Plant sources of vegetable protein contain cancer-fighting compounds as well as numerous other antioxidants to strengthen immunity. Numerous types of beans are available, some of which have additional properties to them. The adzuki bean is considered important for healing and therapy, particularly for kidney-adrenal malfunction. The green mung bean is one of the easiest to digest and can be used to lower blood pressure. Black beans are helpful for the reproductive system in women. Soy beans are a little more difficult to digest; they need twenty-four hours to soak and several hours to cook, making them softer and easier to digest. The soy bean does offer a high amount of (34.3%) of protein, actually more than beef (20%)(Tierra, 1998, p.63). Many other bean such as great northern beans, kidney beans, garbanzo beans, pinto beans and white beans are easy to make a part of any meal. Here is a favorite of mine: Beans and Greens

Excess animal protein intake is considered the link between Americans and cancer/degenerative diseases. Economic stature is a direct reflection of these diseases; under-developed countries have a much less significant amount of occurrence. Numerous toxins are associated with meat consumption, either due to the environment in which the animals are raised, the diet they are fed, the antibiotics administered to keep them alive, the hormones fed to ensure their growth, the preservatives added to retain their quality, or all of the remnants from these toxins which are then released in our water supply.
